What strategies can be developed, using blogs, that will assist Mrs Brown Spanish Class to have an immersion experience where they go to a Spanish speaking country and interact with native speakers.

Senora Brown could also post the required vocabulary as words for the day (or week) and require the students to respond using these words in sentences. Then she can post the most creative sentence of the day!
I suppose too that older students could be directed to Spanish language blogs (maybe by other students) and as a class activity students coudl 1) translate and discuss the topic and 2) post comments (in Spanish of course)
Students could set up there own account in Spanish and only use the language to communicate. In so doing they would be force to learn the language. Students would also be encourage to correct any mistakes seen. The teacher could also use this medium to give information relating to the trip and ask the students to tell her what was posted. Of course all of this must be done in Spanish
Mrs. Brown could organize a e-pal through blogging. She could have the students exchanging short emails in spanish. They can have an interpretator there

I would extend it though so that students link to other Spanish websites to become accquainted with the culture and then develop a dialogue perhaps in Spanish to discuss their findings. They could probably print a scipt of their dialogue and record it so that they get a sense of the pronounciations involved.
